Beef Stroganoff

beef stroganoff 


  • 500g good quality stewing steak
  • 50g butter
  • 2 onions finely chopped
  • 100g mushrooms sliced
  • salt, freshly ground black pepper and grated nutmeg 
  • 1/2 tsp dried basil
  • 150ml beef stock
  • 300ml soured cream
  • 2 tbsp finely chopped parsley or chives


  1. Cut the meat into thin slices and then int strips.
  2. Heat the butter in a pan, add the onions and fry until soft.
  3. Add the meat and brown over fairly high heat.
  4. Reduce the heat and add the mushrooms, salt, pepper and nutmeg, basil and stock.
  5. Bring to the boil then cover and simmer for 45 minutes.
  6. Add the cream, check the seasoning and reheat but do not allow the mixture to boil.
  7. Sprinkle with parsley or chives and serve.
