- Cut the meat into thin slices and then int strips.
- Heat the butter in a pan, add the onions and fry until soft.
- Add the meat and brown over fairly high heat.
- Reduce the heat and add the mushrooms, salt, pepper and nutmeg, basil and stock.
- Bring to the boil then cover and simmer for 45 minutes.
- Add the cream, check the seasoning and reheat but do not allow the mixture to boil.
- Sprinkle with parsley or chives and serve.
