Courgette Chutney

 

Ingredients

  • 2 lb courgettes trimmed and chopped
  • 3 lb tomatoes chopped
  • 1.5 lh onions peeled and sliced
  • 2 cloves garlic peeled and chopped
  • 1 pint mal vinegar
  • 1 level tsp salt
  • 1 level tbs mustard
  • 1 level tbs paprika
  • 1 level tsp Cayenne Pepper
  • 1 lb soft brown sugar
  • 4 oz raisins chopped

Method

  1. Heat the courgettes, tomatoes, onions and garlic with half the vinegar in a large saucepan or preserving pan.
  2. Simmer them uncoveered for about 30 minutes. or until the vegetables are soft.
  3. Add the rest of the vinegar and the remaining ingredients.
  4. Simmer the mixture gently for 45 - 60 minutes until it is thick.
  5. Stire occasionally to prevent the chutney from sticking.
  6. Pour into clean, warmed jars.
  7. Cover and label.
