- Puree the blueberries in a blender
- Put the pureed blueberries and sugar into a heavy based saucepan and heat until the sugar is dissolved
- Refrigerate until the mixture is cool
- To the cooled blueberry and sugar mixture add the vanilla essence, salt, milk and the cream. Mix well.
- Pour into an ice cream maker and churn
- Freeze to allow the ice cream to set
