Kulfi or Indian Ice Cream



  • 500ml whole milk
  • half a cup of condensed milk
  • quarter cup of dry milk powder
  • 1 pinch of saffron threads
  • half teaspoon of ground cardamon
  • quarter cup of chopped Pistachio nuts
  • half a cup of candid peel and chopped cherries
  • one cup of caster sugar


  1. Add the whole milk and the milk powder to a havy bottomed pan.  Bring just to the boil and add the saffron and cardamon powder and the sugar.  Stir until dissolved and then simmer or 10 minutes.
  2. Allow to cool and add the nuts and fruit.
  3. I use a refrigerating ice-cream maker.  It takes about 1 hour to make perfect ice cream.
  4. Freeze and serve with waffers.
