Mincemeat Veggie

veggie mincemeat
  12 oz Apples
  8 oz Valencia Raisins or Muscatels
  8 oz Sultanas
  4 oz Pine Kernels
  4 oz Ground Almonds
  4 oz Flora
  half tsp All Spice
  1 orange - rind and juice
  1 lemon - rind and juice
  8 oz Currants
  4 oz Candied Peel
  8 oz Soft Brown Sugar
  4 oz Chopped Figs


Mix and then mince all the ingredients together.

In my mother's recipe book this was originally made with butter which demonstrates how thoughts of vegetarianism has changed over the years since 1930.  I have substituted Flora and it works quite well.  However, a more solid fat substitute would work better.- perhaps Trex or White Flora.

I found this very old hand made recipe book which my mother had put together.  The pages had been duplicated on a Roneo or Gestetner.  The cover had been hand decorated.
