Basic Cup Cakes

  • 250g butter, softened
  • 250g caser suga
  • 250g self raising flour
  • 4 medium eggs
  • 4 tbsp milk
  • a pinch of salt


  1. Oven 190C Gas Mark 5
  2. Beat the butter until softened and creamy
  3. Add the sugar, flour, salt, eggs and milk and whisk until the mixture is smooth.
  4. Using an ice-cream scoop place one measure in each paper case on a muffin tray.
  5. This mixture makes 12 cakes.
  6. Bake in the middle of the oven for about 18 minutes.

Decorate with icing or butter cream

Flavouring on the Cup Cakes:

Lemon add the zest of the lemon to the mixure plus 4 tbsp of lemon juice in place of part of the milk.

Choclate add 2 level tbsps of cocoa powder in place of 2 tsp of flour.

Rose use 1-2 tbsp of of rose water in place of 2 tbsp of milk.

Coffee omit the milk and instead use 2 tbsp of instant coffee dissolved in 4 tbsp of hot water.
