Puff Pastry

  • 2.5 oz stork margarine
  • 2.5 oz lard
  • 8 oz plain flour
  • 1 tsp salt
  • 5 fl oz water
  • 1 tsp lemon juice


  1. mix the water and lemon juice
  2. fork the margarine and lard together and place in the refrigerator to chill
  3. alternatively use 5 oz butter
  4. shape the fat into small pieces the size and shsape of brazil nuts
  5. place the flour and the salt in the kenwood mixer on low speed to blend the flour and salt together
  6. add the fat and mix the with the flour and salt until the butter is just covered
  7. add the lemon juice and water and mix on low speed until incorporated
  8. roll out on a well floured board to a 12" x 9" shape
  9. mark the oblong into thirds and fold the top third over the middle third and the bottom third on top of that
  10. give the pastry half a turn and roll out again to 12 x 9 and follow 9 again
  11. repeat for a third time
  12. chill and use
