Clotted Cream



  • Fresh Double Thick Cream


  1. Find heavy whipping cream that isn't ultra-pasteurized that has a minimum of 40% fat.
  2. Pour the cream into a heavy bottomed oven safe pot.
  3. Cover the pot and put it in the oven at 180F 80C
  4. Leave for at least 8 hours.Let the pot cool at room temperature and then refrigerate for at least 8 hours.
  5. Remove the clotted cream from the top of the pot.

At least one of the Samsung Combi oven / microwave will maintain a temperture of 80C.  Its ony drawback is that it can only be timed for one hour.
