Royal Icing

  • 1 Kilo sifted icing sugar
  • 4 eggs, whites only
  • juice of one lemon
  • 2 tsp of glycerine


  1. spin the egg whites, lemon juice and glycerine until the whites have broken down
  2. add the egg white mixture to the icing sugar and beat in a mixer until smooth and shiney
  3. be prepared to add a little more icing sugar or egg white as necessary
